Baked Sweet Potato Wedges
A terrific (and healthier) substitution for French fries. Sweet potatoes are loaded with vitamin A.

What you'll need
2 medium sweet potatoes (about 5” long)
3 TBSP olive oil, divided
1 TBSP cornstarch (optional, but helps make them crispy)
2 tsp. paprika
¾ tsp. salt
½ tsp. ground black pepper
½ tsp. ground cumin
¼ tsp. ground red pepper (cayenne) – optional
What to do
Preheat oven to 425 degrees. Lightly coat a large cookie sheet with 1 Tablespoon of the olive oil (for easier cleanup, cover the cookie sheet with foil) and place in the oven to heat while you prepare the potatoes.
Peel sweet potatoes; cut them in half lengthwise, then cut each half into 4-6 wedges. Mix remaining 2 TBSP olive oil, cornstarch and spices in a large bowl or zippered plastic bag. Add prepared potato wedges and mix very well until evenly coated.
Spread potatoes in a single layer on the heated cookie sheet. Bake 20-35 minutes, turning them over a few times with a spatula during cooking so they will brown evenly.
