Chicken Kebabs Marinated in Yogurt and Spices

What you'll need

2 TBSP lemon juice
½ cup plain nonfat yogurt
3 TBSP chopped cilantro
½ tsp. ground ginger
2 cloves garlic, minced (or 1/8 tsp garlic powder)
1 tsp. ground cumin
1 tsp. ground coriander
1 TBSP olive oil
1 tsp. salt
2 pounds boneless, skinless chicken breast, cut into 1” cubes

What to do

In large glass baking dish, combine lemon juice, yogurt, cilantro, ginger, garlic, cumin, coriander, olive oil and salt. Add chicken cubes, stir to coat with the yogurt marinade, cover with plastic wrap and refrigerate for 1-2 hours (avoid marinating longer than 4 hours – the yogurt will ‘over-tenderize’ the chicken and may get mushy). If you are using wooden skewers, place in a tray of water while the chicken marinates.

Preheat broiler and place adjust the oven rack so that the chicken will be about 4 inches from the heat source. Lightly brush the broiler pan with olive or canola oil. Remove chicken from marinade and thread onto skewers. Place skewers on the prepared broiler pan and broil, turning once or twice, for 12-15 minutes or until chicken is cooked through.
