Fresh Green Bean Salad with Lemon-Mustard Dressing

What you'll need

1 pound small, slender fresh green beans (haricots vert), stems trimmed
2 TBSP olive oil
2 TBSP fresh lemon juice
1 tsp. grainy brown mustard
pinch of sugar
1 clove garlic, finely minced
Salt and pepper to taste
¼ red onion, very thinly sliced

What to do

Bring a large pot of salted water to a boil. Add beans and cook until crisp-tender, about 4 minutes. Drain, rinse with cold water to stop cooking, then drain thoroughly and pat dry on a kitchen towel.

Stir together olive oil, lemon juice, mustard, sugar, garlic, salt and pepper in the bottom of a salad bowl. Taste and adjust seasonings. Add beans and red onion to the bowl, and toss thoroughly to coat with dressing. If possible, allow beans to marinate at room temperature for an hour or so before serving to allow flavors to blend.
