Shot Put Protein Bites
These protein balls are the perfect healthy snack!
Makes about 10 servings (3 balls per serving)
What you'll need
1 TBSP flax seeds
1 TBSP chia seeds
½ cup whole pitted dates (about 12)
¼ cup dried whole cherries
10 dried apple rings
¼ cup peanut butter
½ cup rolled oats (1 minute type)
6 scoops Herbalife24™ Rebuild Strength
2 tsp. vanilla extract
1/3 cup unsweetened almond milk
1 TBSP Herbalife24™ Rebuild Strength
1 TBSP dried coconut flakes
What to do
In a small bowl, combine flax and chia seeds with 2 TBSP water and let stand while you prepare remaining ingredients. Chop dates, cherries and apple rings coarsely (or pulse in the food processor, being careful not to over process – you want the fruit chopped, not blended). Transfer chopped fruit to a large bowl and add peanut butter, rolled oats, 6 scoops Rebuild Strength, vanilla and almond milk. Mix with your hands until well mixed; the mixture should just hold together. If it seems dry, add water or almond milk a tablespoon at a time, being careful not to make the final mixture too soft. Dampen hands with water and roll mixture into 1” balls. Place balls on waxed paper-lined cookie sheet or large tray.
In a small bowl, combine 1 TBSP Rebuild Strength and coconut. Roll balls in this mixture to coat completely. Balls are now ready to eat. To store, line a covered storage container with waxed paper. Place balls on waxed paper, cover and store in the refrigerator for up to 5 days.
