Glazed Carrots with Lime and Dill
Ordinary carrots become extraordinary when quickly cooked and glazed with dill, lime and a touch of brown sugar.

What you'll need
1 TBSP olive oil
1 TBSP lime juice
1 TBSP brown sugar
½ tsp. dried dill weed
1 pound carrots (about 6 large carrots), peeled, thinly sliced on the diagonal
Salt and pepper to taste
What to do
Mix olive oil, lime juice, brown sugar and dill in a small bowl and set aside.
Place carrots in a large skillet with ½ cup water. Place over medium-high heat, cover, and cook until carrots are tender-crisp, 2-3 minutes.
Remove cover; drain off any water that remains, and add olive oil mixture. Stir fry carrots for a minute or two, until they are shiny and glazed. Season to taste with salt and pepper.
