Grated Zucchini Saute
Grated zucchini has a great texture, and benefits from a quick sauté with a little olive oil and garlic.

What you'll need
1 TBSP olive oil
3 medium zucchini, grated on the largest holes of a grater
1 clove garlic, minced
1 tsp. dried basil
Salt and pepper to taste
2 TBSP grated parmesan cheese (optional)
What to do
Heat olive oil in a sauté pan over medium-high heat; add zucchini, garlic and basil. Saute for a few minutes just until zucchini is tender but still a bit crisp – about 4-5 minutes. Remove from heat. Season with salt and pepper to taste, sprinkle with parmesan cheese.
