Simply Delicious Leafy Greens

The key to delicious greens is to not overcook. To retain their bright color and fresh flavor, sauté only until wilted.

Serving Size

Makes 2 servings

What you'll need

1 pound fresh Swiss chard, spinach or kale
1 ½ tsp. olive oil
¼ red onion, very thinly sliced
2 cloves garlic, minced
Salt to taste

What to do

Wash the chard thoroughly and cut off the stems. Chop the leaves into large pieces and toss in a colander or salad spinner to dry the leaves. Heat a large skillet over medium-high heat, and add the olive oil. When the oil is hot, add the onion, and cook, stirring, just until onion softens. Add the chard and garlic, and cook and stir just until the chard wilts. Finally, add salt to taste, stir quickly, and serve immediately.
