Spicy Roasted Garbanzo Beans
These roasted, spicy beans make a satisfying, crunchy protein snack.

Makes about 8 servings (1/2 cup each)
What you'll need
2 15-ounce cans garbanzo beans (chickpeas) thoroughly drained and rinsed (about 3 cups)
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
What to do
Heat the oven to 400°F and arrange a rack in the middle of the oven.
Place the garbanzo beans in a large bowl and toss with olive oil, cumin, chili powder and salt until evenly coated. Spread the chickpeas in an even layer on a rimmed baking sheet and bake about 30 to 40 minutes, shaking the pan a few times during baking, until beans are crisp. Check frequently the last 10 minutes to avoid burning.
