Sweet and Sour Lettuce Cradles

What you'll need

2 TBSP oyster-flavored sauce
2 TBSP light soy sauce
2 tsp rice wine or dry sherry
1 TBSP brown sugar
¼ tsp garlic powder
¼ tsp ground ginger
¼ tsp ground white pepper
2 tsp. canola oil, divided
1 pound ground chicken breast or turkey breast
1 medium carrot, grated
⅓ cup canned water chestnuts, minced
2 green onions, chopped
12 butter lettuce or iceberg lettuce leaves

What to do

In a small bowl, whisk together oyster sauce, soy sauce, rice wine, sugar, garlic, ginger and pepper. Set aside.

Place skillet over high heat. When pan is hot, add 1 tsp. canola oil. Add ground meat, then stir and cook meat, breaking up into small pieces with a wooden spoon. Cook for 4-5 minutes, or until meat is no longer pink. Transfer meat from skillet to a bowl or plate and set aside.

Wipe pan with paper towel. Return skillet to heat and add remaining teaspoon of canola oil. Add carrots, water chestnuts and green onions. Stir a few minutes until vegetables soften. Return cooked meat to skillet. Add sauce mixture and stir until evenly coated. Spoon mixture into lettuce leaves and serve.
