Tomato and Herb Salad

A simple mix of ripe fresh tomatoes and fresh herbs. Make this one when tomatoes are in peak season.

What you'll need

3 TBSP olive oil
2 TBSP red wine vinegar
½ tsp. salt
¼ tsp. black pepper
½ tsp. sugar
2 TBSP chopped mixed fresh herbs (parsley, dill, basil, thyme, oregano, tarragon)
4 cups cherry or grape tomatoes (mix of red and yellow is nice), halved

What to do

Whisk together olive oil, vinegar, salt, pepper and sugar at the bottom of a medium sized bowl. Add the herbs and tomatoes, and toss gently until well combined.
